Homemade Poptarts

I have learned I am a better assembler of food than I am a true baker or chef. I started this challenge with the idea I would make each ingredient from scratch, but the busier I became, and the more behind on this blog I became, I went back to my roots of food assembly; my family has a strong tradition of food assembly, you see.

But I can say these turned out looking more impressive than I thought they would be and I think others would think so as well. This is a pretty simple "recipe" that I invented:

Ingredients:

1 package of refrigerated pie dough containing two pie crusts- I used pillsbury

1 jar of jelly or other filling of your choice- I used blackberry

Directions

1. Let the pie dough sit outside the fridge for 30 minutes before rolling it out, this ensures it won't stick to itself or crack. Preheat the oven to the pie dough instructions on the side of the box.

2. Cut the pie dough into 3x4 inch rectangles. A ruler is very helpful for this step.

3. Use parchment paper or pam spray on a cookie sheet and lay down half of your rectangles roughly 1/2"-1" apart. Place a large dollop of jelly on each rectangle, but be careful it's easy to overfill, but it's also sad when you bite into an under filled poptart.

4. Place the remaining pie dough rectangles on top of the jelly and crimp the sides with a fork.

5. Bake roughly for 10-15 minutes, checking frequently. They do not take long to bake.

6. cool and enjoy!

Variations

This recipe can work with all types of fillings, including peanut butter, chocolate, marshmallows ect... I also thought they would be good frosted, I think I will try that next time.

Look Mary! No soggy bottoms.
