The Third Victoria Sandwich Cake Post

Here comes the third Victoria Sandwich Cake post! I have been wanting to make these ever since I saw them make mini-victoria sandwich cakes on our inspirational Great British Baking show.

I didn't have 8 inch cake pans (only 9 inch), so my cakes weren't very tall. Also the cake itself came out a little dry, but the jam and whipped cream made up for it. Overall, it was a pretty easy, good little cake.

Here it is!

Strawberry Jam Recipe*

Ingredients

  • 1 pound fresh strawberries, crushed

  • 2 cups white sugar

  • 2 tablespoons lemon juice

Instructions

  • In a heavy bottomed saucepan, mix together all ingredients. Stir over low heat until the sugar is dissolved.

  • Increase heat to high, and bring to a boil. Stir often, for about 10 minutes.

Sandwich Cake Recipe**

Cake Ingredients

  • 12 tablespoons unsalted buter

  • 3/4 cup sugar

  • 3 eggs

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon almond extract

  • 1 1/2 cups self-rising flour

Filling Ingredients

  • Jam

  • 3/4 cup heavy cream

  • 1/2 teaspoon vanilla extract

  • 1 tablespoon sugar

Instructions

  1. Preheat oven to 350 degrees F. Grease two 9 inch round cake pans

  2. Beat together the butter and sugar until well combined

  3. Beat in the eggs one at a time. Add the extracts. Add the flour, beating gently until combined.

  4. Divide the batter between the cake pans. Bake for 15-20 minutes.

  5. When the cakes are cool, place one layer on a plate. Spread with the jam.

  6. Whip the cream. Sprinkle in 2 tablespoons of sugar. Stir in the vanilla at the end.

  7. Spread the whipped cream over the jam. Top with the second layer of cake.

  8. Sprinkle with confectioners' sugar.
